The weekend flew by. I had class again and it was great. I am really enjoying being in school again. I go home every night with a headache from thinking so hard! I guess being a mom doesn't really stretch my mind that much! I am grateful for the things that I am learning and discovering about education and am becoming more and more convinced that home schooling is what is going to be best for our family.
We had some neighbors over for dinner last night and I have to admit that it was really yummy! Here are a couple of the recipes.
Sunday Chicken
1 pkg of Budding Beef
1/2 lb. of bacon
6-7 chicken breasts
1 cup sour cream
1 can cream of mushroom soup
Lay out the Budding beef on a greased cookie sheet . Place the chicken breasts on top and put the bacon on top of the chicken. Cook in a 350 degree oven for about 45 minutes, or until the chicken is done. Take it out and spread with sour cream and mushroom soup that have been mixed together. Put back in the oven for about 10-15 minutes. Take out and serve.
Caramel Dumplings
Sauce:
3/4 c. white sugar
3/4 c. brown sugar
2 T butter
3 1/2 c. water
1 tsp. vanilla
Mix together in pan and let boil 5 minutes. Remove from stove and pour into 9x13 baking dish.
Dumplings:
2 c. flour
2 tsp. baking powder
2 T. sugar
pinch of salt
4 T. melted butter
1 c. milk
1 tsp. vanilla
Mix together and drop spoonfuls of dough onto the sauce. Bake at 350 until the dumpling are light brown, 20-30 minutes. Serve with whipped cream.
